KVASS - THE HEALING EFFECTS OF THIS BEET DRINK
You may have heard about beets and how they have many healing benefits for life, but this drink will change your mind forever. Kvass is easy to make and will help you live a better life.
The hardest part is cutting the beets. Some say you do not have to peel the beets, but instead wash them well. For me I chose to peel the beets with a potato peeler and then cut them on a table or cutting board. I purchased 3 kilos and put them in bags. Three kilos will make about 7 recipes of kvass. Each jar of kvass will last around two weeks. You want to use a large 1/2 gallon size jar with either a plastic lid or a metal lid. See picture below. |

Directions:
When most of the liquid has been drunk, you may fill up the container with water and keep at room temperature for another two days. The resulting brew will be slightly less strong than the first. After the second brew, discard the beets and start again. You may, however, reserve some of the liquid and use this as your inoculant instead of the whey or kefir starter. Makes 2 quarts
Note: do not use grated beets in the preparation of beet tonic. When grated, beets exude too much juice resulting in a too rapid fermentation that favors the production of alcohol rather than lactic acid.
- 2-4 beets
- ¼ cup whey or juice from yogurt or sauerkraut (whey is the liquid that you can drain from yogurt in a bag)
- 1 tablespoon sea salt or himalayan salt
- filtered water
- half gallon glass jar
Directions:
- Wash beets and peel (if not organic) or leave skin on (if organic)
- Chop beet in to small cubes but don't grate.
- Place beets in bottom of half gallon jar.
- Add whey/sauerkraut juice and salt (If you don't want to use whey or sauerkraut juice, you can double the salt instead, though it may take longer to ferment)
- Fill jar with filtered water.
- Place the lid on and place in a pan and put in a cabinet. Check for bubbling periodically and burp the jar as needed. (This means unscrew the lid slightly or half way. Never opening the jar).
- Transfer to fridge.
- Consume as desired. I drink 1/4 cup twice a day (morning and night).

I wanted to share a medicinal story related to beet kvass. I started making beet kvass about three years ago as we’ll. but not for vitamins sake, I was suffering through severe gallbladder attacks but I was determined not to get my gallbladder surgically removed. I believed food could be medicine and was determined to find a way to recover my gallbladder function naturally. Beet kvass played an important role in helping me do that. I researched and found that beets stimulate the gallbladder and so I stared making beet kvass. I was scared to try it at first as well but pain is a powerful motivator so I tried it and liked it. It was easily digested and it did help to relieve my symptoms while eating and that along with the protocol from Dr Hilda Clark I cleansed my gallbladder and I haven’t had an attack since. I still make beet kvass regularly not just as maintenance but also because I really enjoy it.

Ingredients
- 2-3 medium beets, peeled and chopped into 1 inch cubes
- ¼ cabbage, chopped
- ½ onion, chopped
- 2 Tbsp sea salt (where to buy)
- ¼ cup whey or 1 Tbsp starter culture (where to buy), optional
- filtered water to cover (where to buy a water filter)
- Add onion and cabbage to a 2 quart glass jar (Homemade Mommy note: I use these inexpensive jars)
- Add the beets on top of the onion and cabbage so that they act as a weight
- Add salt and optional whey
- Cover with filtered water, leaving an inch between the top of the jar and the top of the water
- Close the jar and leave in a cool dark place in your home
- Transfer to the fridge after 3-7 days

Chopping Boards
Yes, you will need a good chopping board to cut beets. Beets are hard to cut and cannot be chopped in your hands. Use a firm surface to do this properly.

Glass JarsYou will need a glass jar for the kvass. One of the recipes called for using a quart where others call for using a half gallon. Either way buy a quality jar.
